VEGAS FOOD UPDATE: In-N-Out to Open Largest Location, Venetian Constructing Food Hall

A new In-N-Out Burger is currently being constructed in Las Vegas on the third-floor roof deck of The BLVD, a 400,000 square-foot retail, entertainment, and dining plaza located at the site of the former Hawaiian Marketplace at 3755 S. Las Vegas Blvd.

This new location will not only double In-N-Out’s presence on the Strip to two locations, but it is also anticipated to be the largest In-N-Out ever constructed, featuring 8,000 square feet of indoor dining and an additional 2,500 square feet on its patio.

The popular West Coast fast-food chain originally opened its first Strip location across from the Flamingo at the LINQ Promenade in 2022. It now boasts nearly 14 locations in Las Vegas and over 400 across the US.

Exciting Food Hall

A new food hall named Via Via is set to launch next summer at the Grand Colonnade in The Venetian, as announced by the casino resort. Some of its tenants will include:

  • All’Antico Vinaio, a renowned Florentine sandwich shop
  • B.S. Taqueria, a popular chorizo eatery founded in LA by chef Ray Garcia
  • Howlin’ Ray’s, a Nashville hot chicken joint created by chef Johnny Ray Zone
  • Ivan Ramen, a high-end ramen shop by chef Ivan Orkin
  • Scarr’s Pizza, a New York-style pizzeria
  • Turkey and the Wolf and Molly’s Rise and Shine, eateries from chef Mason Hereford

Last week, The Venetian also announced that Bazaar Meat by José Andrés will move to its Palazzo Tower early next year, leaving behind the Sahara.

Via Via marks the fifth new food hall opening within two years, signaling a shift away from traditional Strip buffets to a more upscale and profitable food delivery system for casino companies.

Buffets were popular when casinos relied heavily on gambling revenue, but with the shift towards income from hotel operations, dining, and entertainment, high-end dining options have become more prevalent on the Strip.

New Dining Options

Brunello, a fresh Italian restaurant, has opened today in Summerlin at 9320 Sun City Blvd., taking over the space previously occupied by My Mother’s House.

The Cosmopolitan has filed for a trademark for a potential new burger joint named Naughty Patty’s, hinting at a replacement for Holsteins—although that space is already set to become Amaya Modern Mexican Restaurant.
