Carbone Riviera has unveiled its exciting new menu and stunning interior just hours before its grand opening on November 7 at the Bellagio.

The standout feature of the entrée selection is a nightly whole fish experience that includes sea bream, red snapper, Dover sole, branzino, turbot, and a host of rare fish varieties from across the globe, providing diners with an extraordinary seafood journey.
“Here, we are elevating seafood to an unparalleled level unlike anything we’ve done previously,” stated chef Mario Carbone, co-founder of Major Food Group.

Classic dishes from Carbone like spicy rigatoni vodka and Caesar alla ZZ will also feature on the menu, alongside a selection of premium Snake River Farms steaks. Dessert options will showcase Carbone’s interpretation of traditional dolci, including stracciatella tiramisu and Sicilian lemon cheesecake.
Initially launched in New York’s Greenwich Village in 2013, Carbone has expanded to 10 international locations, with its Las Vegas debut occurring at the Aria in 2015.
According to the restaurant’s team, the new 240-seat venue — adorned with terracotta leather, mirrored banquettes, and bespoke Murano glass sconces and chandeliers — was envisioned by Martin Brudnizki, drawing inspiration from “the Mediterranean and Picasso’s Vallauris years.”
This reference pertains to the notable artist’s residence in the South of France from 1948 to 1955, not to the restaurant Picasso—though immediate comparisons will likely arise with chef Julian Serrano’s Michelin-starred establishment that closed in August 2024 after 26 years.
Docked at the patio is the restaurant’s striking $3 million yacht, Fortuna, whose modest speedboat-like appearance has drawn both admiration and criticism.
Dining Updates and Changes
Vital Vegas has reported that the Cuban restaurant Havana 1957 will close at the Flamingo by year’s end, transitioning to a new concept under the same ownership, Vida & Estilo Restaurant Group, branded as Café Americano. Additionally, the bayou-themed Walk-On’s Sports Bistreaux has exited from Harrah’s.
Randy’s Donuts is set to launch its fifth location in Las Vegas at Red Rock Casino Resort & Spa in Summerlin, making its debut in early 2026, following the closure of Federal Donuts & Chicken on January 2.

A new Irish pub concept, appropriately named the Irish Spot, will replace the former Crown & Anchor British Pub in December or January. However, it’s tough to fill the shoes of the Crown & Anchor, which closed unexpectedly in July after three decades. This beloved dive near UNLV was where Brandon Flowers of Las Vegas rock band The Killers penned the famous song “Mr. Brightside” after a formative experience in the establishment. (A smaller, less well-known version of Crown & Anchor operates at 4755 Spring Mountain Road.)
Basketball star Shaquille O’Neal recently closed one of his two Big Chicken locations in Las Vegas — the one that opened in January 2023 on West Tropicana Avenue. His original venue, which opened at Paradise Road in October 2018, remains operational.
Panini Kabob Grill, a popular chain with around 30 locations in Southern California, is set to open at the Fashion Show mall by next summer, taking over the space formerly occupied by RA Sushi.
