Bally’s Chicago has teamed up with Levy, a prominent name in sports hospitality, to craft the culinary offerings for the new $2 billion casino resort located in River West.

Located in Chicago, Levy manages high-end dining options at stadiums, arenas, and various entertainment venues nationwide. They will be responsible for the curation, development, and management of all food and beverage services at Bally’s Chicago, anticipated to open its doors in late 2026.
Soo Kim, the chairman of Bally’s board, stated that collaborating with Levy was an “obvious choice,” highlighting the company’s Chicago origins. Kim noted that Levy will create a food and beverage program that “celebrates Chicago’s rich culinary heritage while enhancing guest experiences with locally inspired, world-class hospitality.”
Levy is known for iconic dining experiences such as the Grey Goose Honey Deuce at the US Open, the Mint Julep for the Kentucky Derby, Stadium Nachos at Mercedes-Benz Stadium, BBQ Baked Bean Casserole from Bristol Motor Speedway, and the Daytona 500’s Pileup (a unique soft pretzel dish topped with chicken tenders, cheese fries, and bacon).
Details regarding the specific restaurant partners and concepts will be unveiled soon, although Casino.org speculates one brand is a likely choice.
Could Michael Jordan Be a Winner?
Levy has a partnership with the well-known Michael Jordan Steakhouse. In collaboration with Cornerstone Restaurant Group, which manages the steakhouse brand, Levy helped introduce the restaurant named after the six-time NBA champion at ilani Casino Resort in Washington and Mohegan Sun Casino Resort in Connecticut.
When the Mohegan casino opened in South Korea at Incheon International Airport, they enlisted Levy to curate the dining options for the integrated resort, including the Michael Jordan Steakhouse.
Establishing a Michael Jordan Steakhouse at Bally’s Chicago would be fitting; MJ spent most of his career with the Chicago Bulls, apart from two seasons with the Washington Wizards.

Cornerstone Restaurant Group currently operates the flagship Michael Jordan’s Steakhouse located at 505 N. Michigan Avenue in the InterContinental Magnificent Mile, not far from the iconic Tribune Tower and mere blocks from where Bally’s Chicago’s temporary location is situated within the Medinah Temple.
Insights on Bally’s Chicago
Bally’s Chicago will feature a luxurious 500-room hotel reaching 34 stories. The resort will boast amenities such as a rooftop pool, a spa and fitness center, a 3,000-seat theater, six full-service restaurants, and a dining hall with additional options.
The casino’s 178,000-square-foot gaming space will incorporate 3,500 slots and table games, along with a sportsbook. Furthermore, Bally’s Chicago will offer public amenities, including a two-acre park and a 2,000-foot-long riverwalk.
This new establishment will replace the former Freedom Center, which served as the printing facility and headquarters for the Chicago Tribune until May 2024.
Construction is ongoing at 777 W. Chicago Avenue, located about a mile west of the temporary casino.
