Emeril Lagasse is set to launch Meril at the M Resort in Henderson, Nevada, on Thursday, July 16. This marks the first off-Strip venue for the award-winning chef who has garnered three James Beard Awards.
Inspired by his New Orleans roots, the restaurant’s menu will offer a range of contemporary American dishes reflective of Lagasse’s global culinary experiences. For breakfast, diners can indulge in beignets, bananas foster French toast, and andouille hash. The dinner menu showcases options like boudin balls, barbecued shrimp, and ribeye served with chimichurri.

The grand opening follows nearly ten years after the original Meril, named in honor of Lagasse’s youngest daughter, launched in New Orleans in 2016. The decor at the M Resort is bright and modern, featuring a wraparound bar, New Orleans-inspired abstract art, and a patio that overlooks the pool and outdoor concert space.
Moreover, Meril will mark the first collaboration between a celebrity chef and the M. The resort, owned by Gaming and Leisure Properties and managed by Penn Entertainment, recently introduced a significant expansion.

BLVD, a shopping center already famed for unveiling the second-largest In-N-Out Burger in the U.S. on its rooftop, has announced four additional dining and drinking establishments set to open across its other three floors in the first quarter of 2027.

1. Tenshou Collection

This culinary hub will offer a variety of dishes including sushi, tempura, yakitori, kaiseki, and premium Chinese cuisine. Additionally, Tenshou will be home to the fourth U.S. location of Tokyo’s renowned Bar Centifolia, famous for its performance cocktails, sword-shaped ice, and the expertise of bartender-owner Yuzo Komai.
2. Pepper Lunch
This iconic DIY teppanyaki brand from Tokyo allows diners to cook their own meats and veggies on sizzling plates at the table. Established in 1994, it previously operated in Chinatown’s Shanghai Plaza for over six years before closing in May.
3. Mothership Coffee Roasters
Founded in 2012, this women-led coffee enterprise boasts five locations in Las Vegas, focusing on ethical sourcing and community development. The founder and CEO, Juanny Romero, was named runner-up for the U.S. Small Business Administration’s Small Business Person of the Year award in 2023.
4. Go Greek
This yogurt bar specializes in homemade Greek frozen yogurt with a rotating selection of flavors. The menu also features smoothies and both sweet and savory Greek bowls. The brand has expanded to over 30 locations in the U.S., the UK, and the Middle East.

Health Inspection Closures
Tacos El Pastor, located at 608 S. Maryland Parkway, Ste. 140, was shut down by the Southern Nevada Health District during a routine inspection on July 14 due to six violations, accumulating a total of 15 demerits.
